This would HAVE to be the YUMMIEST recipe we have featured so far in our newsletter! Not only is this one UNBELIEVABLY delicious, it is also deceptively and cleverly NUTRITIOUS!
LOADED with anti-oxidant rich ingredients, healthy fats, mega-amounts of minerals and vitamins, as well as a good amount of fibre, this recipe is simply GENIUS!
It is a brilliant addition to ANY lunchbox…. big and small kiddies alike! π

INGREDIENTS
Filling
1 cup of dates soaked for 20 mins
1/2 cup water
3 cups of desiccated coconut
ΒΌ cup melted coconut oil
3 tbs cashews (I used macadamia nuts)
1 tspn vanilla extract
Pinch of salt
Chocolate Coating
Β½ cup melted coconut oil
Β½ cup cacao powder
ΒΌ cup agave syrup
Pinch salt
DIRECTIONS
Filling
Blend dates and water to make a date paste
Add the rest of the ingredients and process until well combined
Shape the mixture into desired shapes
Place in the fridge for about 2 hours to set
Chocolate Coating
Mix all ingredients together
Assembly
Place the firm coconut shape on a fork and place in the chocolate mix
Remove from the chocolate and place on a non-stick sheet or grease proof paper
Place in fridge until the chocolate has set.
Wait impatiently and drooling until ready and then ENJOY with ALL your mite!! π
