Banana Nut Cups

These babies are another brain-child creation of our wonderful guest poster Nicole Noodle.

Originally she called them Frozen Nut Nana Cups but for the purposes of clarity I modified it a little 🙂 Anywho! Whatever they are called, they are DEFINITELY delicious AND nutritious!

Banana’s are RICH in vitamins and minerals that really support and nourish a healthy brain, an even supply of energy, good mood and excellent bone and blood health. Raw honey is FULL of anti-bacterial goodness and can also help with reducing sinus/allergen issues. Coconut oil is wonderful for great hormone balance, good skin, hair and nails, and cocao, well NEED I EXPLAIN? 🙂 hehe Good for body, mind AND soul 🙂

Over to Nicole Noodle….

Sometimes you just need a tiny wee sweet treat… these little morsels of loveliness are for those times!

(makes 6)

Ingredients:
1/2 Cup Mixed Raw Nut Butter (I used a combo of almond, walnut and peanut)
1 Tbsp Raw Honey
1 Tbsp Organic Coconut Oil
1/2 Tsp Vanilla Extract
1/4 Tsp Sea Salt
1/2 Banana (sliced into six pieces)
1 Tbsp Raw Cocao Nibs

Method:
– Combine the nut butters, honey, coconut oil, vanilla and salt till well mixed.
– Spread a spoonful in the base of six mini muffin cases.
– Place a slice of banana in the centre of each one
– Cover with remaining nut mixture and sprinkle cocoa nibs over the top.
-Freeze until firm…
