These delicious bars are absolutely perfect for clean, nutritious and satisfying snacks, or even coupled with a delicious smoothie for a super-quick breakfast!

Don’t be afraid to experiment with ingredients to enhance/modify taste, texture and cater to individual preferences… I would personally love to try these with dried figs and pumpkin seeds! YUUUUM!

High in fibre, anti-oxidants, minerals and B-vitamins, this is an energy-boosting, blood-sugar balancing, CRAP-free treat that will satisfy even the fussiest of eaters!

INGREDIENTS
3 large ripe bananas (or 4 smaller bananas)
1/4 cup finely chopped dried dates
3 cups traditional rolled oats
1/4 cup finely chopped dried apricots
1/4 cup slivered almonds
1 teaspoon ground cinnamon
1-1/2 teaspoons vanilla extract

METHOD
Preheat oven to 180°C/160°C fan-forced.
Grease a 16cm x 25.5cm (base) slice pan and line with baking paper, extending paper 2cm above edges of pan.
Mash banana until smooth.
Add oats, dates, apricots, almonds, cinnamon and vanilla.
Stir until well combined.
Spoon into the pan and level by pressing mixture using the back of a spoon.
Bake for 30 to 35 minutes or until golden.
Cut into small bars when cool.
